“Juvetsi”

Meat in sauce baked with pasta “chisaraki”

Γιουβέτσι με κοτόπουλο στο φούρνο

The traditional Greek dish “Juvetsi” is very tasty!

To prepare this dish, we will use the chicken, or rather her hips and wings and pasta in the form of rice called “Krisaraki.”

Many people think that the real, original “Juvetci” is prepared from beef, but in fact the modern interpretation of the dish can be prepared with both – chicken and beef or lamb. Of course, this dish with beef is very tasty, the process is identical, just increase the cooking time. So, let’s proceed .

Ingredients:

2 chicken thighs and 2 wings

Pasta “Krisaraki” -250 gr.

Onion – 1 pc.

Carrot -1 pc.

Garlic-2 slices

1/2 glasses of white wine

Chopped tomatoes-half packs

Fresh tomato-1 pc.

Olive oil

Bay leaf or rosemary

Oregano

Water – 3:1 to the amount of pasta

Salt, pepper according to taste

Wash and cut into pieces of thighs and wings. Dry with a paper towel, cut the chicken into small equal pieces, put salt and pepper.

We take a deep cast-iron frying pan with thick walls, in which you can fry, stew and also bake.

We warm up the olive oil in it (quite a bit) and fry the chicken parts from all sides in it. Then add enough of finely chopped onions, carrots and garlic. Fry until the onion is transparent and close the lid. Stew.

After 10 minutes, add the wine, and without the lid, let’s evaporate the alcohol.

At this time, we grind in a blender or finely chop the tomato and send it to a frying pan along with the shopped tomatoes. Leave to stew.

Parallel warm up the oven up to 180 degrees. After 10-15 minutes put at pan our pasta, and fill them with boiling water in a ratio of 1: 3 (pasta: water), add spices, salt, mix and leave for 15-20 minutes to cook in the oven.

If you think that water is not enough, add a little and mix slowly to avoid immediately overdoing it. The prepared dish may seem liquid at first, but in the process of cooling the pasta will still absorb moisture.

We are sure that you will like this dish. Bon Appetit!
