The famous drink raki is widely known on the Greek island of Crete. It is still being prepared in the traditional way in small distilleries in the courtyard. Cretan raki is the nectar of Crete. This strong drink is almost synonymous with Cretan culture.

We present you the authentic Cretan tradition—the so-called festival “Rakokazana” or “Kazananema” (Cauldron fest). This is a party and at the same time the final phase of the world famous Cretan raki production. In order to understand the etymology of these new words, it is worth to know that the “kazan” is a pot.

All this takes place from October to December. It is almost like a ritual held annually after the grape harvest.

Raki is made from remnants of pulp of grapes left after squeezing to make wort, and then wine. The grapes are placed in a large cauldron (Kazan). Distillation occurs on open fire on the wood, and they obtain famous raki. It is also called “tsikoudia”.

Around the boiler with raki, there is a party: the friends of the raki producer and the owner of the boiler are going to try fresh raki and snacks to it (rakomezedes), which are baked on coals from the bonfire.

These parties are important cultural events for the Cretans. It is also a fantastic opportunity for guests of the island in the autumn season, who want to participate, to get acquainted with local traditions. It is celebrated extensively throughout the island, bringing with it many pleasant moments, may be also intoxication, but always demonstrating hospitality, friendship and possibilities for leisure and cultural connections.

On Crete, common consumption of raki is considered a sign of politeness and friendship, since it is often part of most joint gatherings. Around the boiler there is also a discussion of a wide variety of issues related to public life, politics and agriculture.
